One of the ironic pleasures of being a vegan traveler is that you often don’t expect to run into amazing cafes or restaurants that cater to your needs when you are away from major metro centers. However, there are times when a diamond presents itself in the “rough” and you find yourself hip deep in delicious food. Such was the case when I discovered Namaste cafe while walking around the cute, tiny, and thoroughly carnivorous town of Guatape, Colombia.

Namaste’s owner Adriana, a native Colombian, opened the tiny cafe just 21 days ago.  Her reason for doing so was simple, she loves vegetables and tropical fruit and wanted to share them with others.  The cafe’s menu is small with fresh fruit smoothies, tea, and coffee and a weekly open faced sandwich consisting of two hearty slices of artisan bread piled high with local and seasonal veggies.

When I visited the weekly sandwich was an incredibly delightful and perfectly seasoned combination of ripe avocado, caramelized onions, and sauteed eggplant and bell pepper and drizzled with creamy tahini sauce.  The smoothie was a well balanced concoction of healthy and refreshing flavors including beets, guanabana fruit, purple grapes, and was topped with chia seeds.  A wonderfully light yet satisfying lunch.
